Selection of grape in the vineyard, destemming of grapes and alcoholic fermentation in conic barrels of 77 hl at controlled temperature.

Ageing

12 - 15 months in French oak tonneau of 5 hl (10% new and the remaining
of third-fourth use), followed by 5 months of ageing in vats.
