For Sant'Elena, an imaginary beast came to mind, a magical combination of other animals: a bird's beak, rabbit ears and a squirrel's tail.

Made from vernaccia di San Gimignano grapes exclusively grown in the 3-hectare vineyard of Sant'Elena near the hamlet of Racciano, 350 meters asl, with deep, loose-textured, mostly clayey soils. This selection is released approximately two years after harvesting, after an extended period on fine lees.
The wine releases all of the varietal’s potential. To the nose, it is intense and complex, with a broad, multifaceted aromatic spectrum. Hints of white flowers and citrus fruit blend perfectly with the mineral notes typical of this varietal, primarily flint. Olfactory complexity is achieved thanks to extensive aging on fine lees. The taste is complex, enveloping, with a nice intensity. The gustatory harmony results from a combination of fullness and fresh vibrancy, with a long, taut and bright finish, with a hint of almond.

A chimera, a blend of living elements and animals, a symbol, or simply a bizarre creature, a figment of the imagination and irony of Ages erroneously deemed Dark, the Middle Ages. A figure that aroused astonishment and wonder in 13th- and 14th-century readers, just as in 21st-century wine lovers.
